This Cheesy Ranch Broccoli and Cauliflower casserole is every cheese lover’s dream!
It features a homemade cheese sauce deliciously infused with our Real Food Ranch Seasoning that can be used for this recipe, drizzled over your favorite vegetables, or on top of your favorite macaroni. Don’t worry – the cheese sauce is really simple to make and only takes a few minutes to do so.
One of the best things (aside from being so cheesy) about this recipe is it makes a hefty portion so it’s great for gatherings/pot-lucks/holiday feasts or if you just want to have extra for leftovers the next day.
Cheesy Ranch Broccoli and Cauliflower Casserole
Cheese sauce or Bechamel
- 1/4 cup grass-fed butter
- 1/4 cup einkorn flour (gluten-free all purpose if needed)
- 2 cups almond milk
- 1/2 cup organic grated Parmesan cheese
- 1/4 tsp ground nutmeg
- 3 Tbsp Real Food Ranch Seasoning
- 16oz broccoli, frozen
- 16oz cauliflower, frozen
- 2 Tbsp organic grated parmesan cheese
Preheat oven to 350 degrees; grease a 9×13 baking dish and set aside.
Make cheese sauce: Heat butter in a medium sauce pan over medium heat. When butter is melted, whisk in einkorn flour and cook for 2 minutes, stirring constantly. Gradually whisk in the almond milk, and cook for 5 minutes, or until sauce has thickened, whisking constantly. Take off heat and add parmesan cheese, nutmeg, and Real Food Ranch Seasoning mix; combine well.
Mix the broccoli and cauliflower in a large bowl and then put them into the greased baking dish. Pour the cheese sauce over the broccoli and cauliflower and sprinkle with parmesan cheese topping.
Baking in a preheated oven for 35-40 minutes, or until veggies are tender and sauce is bubbly.
Note: You can use cheese sauce on any vegetables or as your sauce for macaroni.
